Looking to start working it, where should I start?
It's a EL Series 1, so not the 185kw model.
any advice would be fantastic

I would say exhaust. I'm no V8 specialist but that's probably where I'd start.

Pop the cats, Exhaust (twin 2.5), K&N pannel filter, bypass the EGR, T/B spacer, T/B, MAF, Upper and lower manifolds, Edit, Diff gears, Heads, Storker kit.
that should keep you going for a while.

Definately extractors + exhaust.
Then what EFFalcon said.
Is it manual or auto?

It's an auto, unfortunately.
So Extractors and exhaust first? Should I go PM extractors, 2.5 exhaust yea?

Twin 2.25" system, 2.5 is too big for a mild engine and a nice set of hurricane tri-y's.
Then move onto some GT-40P heads, Explorer manifold with throttle body and an AU MAF and injectors followed by a tune.

lol such a girl answer

I had good results from extractors/exhaust/Explorer manifold. 14.8 @ 95mph in a EL Ghia with stock auto and diff gears.

Think he meant single 2.5", which does the job for a mild 5L, and is cheap and readily available.
If you are going to go chasing biggish power, may as well go for a single 3" or twin 2.25s now though
Because its auto, move diff gears up the list.
I'd probably do that next after the exhaust.
At least 3.7s, preferably 3.9s.

Yep i know man, i was more highlighting it because several had suggested a twin 2.5 and call me crazy but on a V8 i hate single systems, the idea of a two pipes crossing over into a pipe which is the same size or only just bigger than the twin pipes that it starts at just doesn't do it for me.

IMHO...
Pacemaker extractors, twin 2 1/2" exhaust (under the diff), EL GT intake snorkle, explorer manifold, larger TB, MAF, Cam & heads, Roller Rockers, Diff gears, shift kitted auto, tune
Also, paint it that burgandy colour, drop it, 18" chromies and fairmont ghia interior...
oh, how i miss !Gn|T|0ns car... ***sigh***

+1.
Twin 2.25" tail section was choking Sam's Sprint over 4500rpm (even without extractors). Go twin 2.5" the whole way, don't bother with 2.25, you'll only have to upgrade later (as a reference, 2.5" x2 is roughly equal to a single 3" in flow capabilities). Get some good heads, intake and extractors on there, and it'll go sweet. Add a cam too so it sounds tough at the lights, and some 3.7 to 4.11 diff gears to get you off the line
