Welcome. Always good to see more EA Ghia owners on here! It looks like it needs some work though. Good to see that cannon gone too. They are just so ricey!
As for serpentine, it's a fairly easy job. I did it recently on mine. You can run the EL tensioner but you have to cut down some aircon spacers, and have to get a special belt that costs $70... or you can use an XH tensioner and belt and it's heaps easier. There's a how-to-guide here that I found very helpful.
tech/index.php?title=EA/EB/ED_Serpentine_belt_conversionHere's how I did mine:
The start. I'd already removed the thermos (If you run serpentine, you also need thermos), radiator, aircon condensor and intake.

Removed the powersteering pump, waterpump, alternator, and tensioners

Harmonic balancer and aircon compressor removed. To remove the balancer you'll need a balancer puller (get one from Repco, Bursons, etc.). The easiest way to crack the centre bolt on the balancer is to use a socket and a breaker bar, rest it against the left hand chassis rail (intake side), and just very quickly crank the car. Don't start it though. Then wind the bolt out most of the way and use the puller on it

Degrease everything. Go nuts. I also took the opportunity to replace the front crank seal as it was the cause of all that oil there. Bolt the new stuff on. Make sure you clean up the block where the waterpump bolts up so that it doesn't leak. I stuffed that part up. Also I found on EA, the alternator has a different plug, so you'll have to snip off the old plug, and wire the new one on instead. I also went the EF radiator and bottom hose to make it easier.

You can also fit an EF belt cover which look awesome
