I've never undertaken a manual conversion myself (I have a <3 BTR fetish) but I'll assume that EF-ELs are the same as EA-EDs, whereas you don't necessarily need to remove the whole dash, you can augment your auto pedal box with a Mal Wood clutchpin? Someone who knows what they're on about will be able to answer your questions properly soon enough mate, good luck with it :D

Removing the dash should be the same as an ED - if so there are five or six bolts at the top of the dash (where it meets the windscreen, underneath the plastic; allen key needed to remove that first), one bolt in each footwell (near where the door hinges are), and a few around the base of the stereo surround. After that you need to undo a few plugs on the right side footwell (near the pedals).

It can be tedious removing the old pedal box and putting in the new one, but honestly it's not that hard of a job. I didn't fully remove the dash when I did mine. It should only take a couple of hours, lots of twisting/contortionist-style maneuvers, and even more cursing.
